Oh, and since I'm now at home, the user manual says "[when you connect it to your computer] iTunes updates the iPod mini music library to match the songs & playlists in your computer's music library, ... deleting songs from the iPod mini that aren't in your music library."
I did that last night (changed my mind on what I want on it) and works great. All of my music files are off of CDs (rather than downloaded from Napster or iTunes), so I don't know if you could move them out of your library to keep them on your HD somewhere without having them downloaded to your iPod.
