I've been invited to a tapas potluck weekend after next, and I've decided to appeal to the group mind. Do any of you have an easy tapas recipe that will still taste good after an hour's drive? Thanks in advance for any suggestions.

I think I'd bring one that's supposed to be served cold. I googled a little bit and found a recipe for fava (broad) bean omelet that you can serve hot or cold. I think it looks yummy.

If fava beans can't be found, you can always just do the classic potato omelette (tortilla espanola). Other possibilities: Manchego cheese with quince paste. Gazpacho. Ajo bianco ("white gazpacho" of garlic and almonds). White anchovies marinated in garlic, parsley, olive oil. Figs or melon slices wrapped in prosciutto (or jamon serrano if you can find it). Raw or grilled vegetables (cold grilled shrimp or chicken would also be good) with romesco sauce (tomatoes, roasted peppers, nuts).

white anchovies with sliced pear and good Spanish cheese is also yummy.
