Chaz got me a cookbook for Christmas. It looks like it has some interesting recipes in it, even if I have to do metric conversions to get the right amount of the ingredients. Yesterday I got my vegetable box, and tonight I tried one of the recipes. It's similar to what I did before, with cooking green beans and chards with bacon, only this time it was kale (with some red chard) in bacon, plus almonds. (The recipe called for chestnuts, but, well, California....) I liked it a lot, though the greens smelled alarmingly like the alfalfa I fed to Max (my horse). I also bought a roasted chicken so I can use its carcass to make stock. I'll see how that goes.

It's past the season that the fancy grocery stores have fresh chestnuts, but I'm wondering if the British food store in Campbell might have some.

I've used both dried chestnuts and vacuum packed, if you can get either of those - prefer the latter, but either is better than no chestnuts.

I'm guessing almonds add crunch, where chestnuts would add a flavour into the mix...

Almonds added a little bit of flavor but from reading the recipe it sounds like I really missed out not having chestnuts.

I'd say so - but then I'm particularly fond of chestnuts. I was quite shocked to learn how hard they are to find in the States.

Chicken stock is good - T kept a pot going for 9 months last year.

I saw vacuum-packed chestnuts at our Trader Joe's up here just the other day--they might still have them down there too?

Failing Trader Joe's fickle 'holiday products schedule' we have also found vacum packed chestnuts at asian markets.

Why not pick up a metric set of measuring cups and spoons? Then you wouldn't have to convert.
