Tapas, anyone?

I've been invited to a tapas potluck weekend after next, and I've decided to appeal to the group mind. Do any of you have an easy tapas recipe that will still taste good after an hour's drive? Thanks in advance for any suggestions.

Almond Stuffed Hot Dates

Sweets usually travel well. Cook the bacon and package separately. Wrap it when you arrive. Put them in the oven at the hosts house for a few minutes.

Ingredients
24 pitted large medjool dates
12 slices bacon cut crosswise (about 12 ounces)
24 whole toasted almonds
1 package of goat cheese
Fresh pepper to taste
Toothpicks

Directions
1) Heat oven to 500 degrees. Line a cookie sheet with foil

2) Put about 2 ounces of soft goat cheese into a large tipped pastry bag and pipe enough cheese to fill the dates cavity halfway. Finish stuffing the date with an almond. Wrap each date with one of the halves of bacon and secure with a toothpick

3) Put on a baking sheet seam side down. Sprinkle with ground fresh pepper to taste

4) Bake until the bacon is warm again and cheese is melty. Serve.

I think I'd bring one that's supposed to be served cold. I googled a little bit and found a recipe for fava (broad) bean omelet that you can serve hot or cold. I think it looks yummy.
http://www.tienda.com/recipes/broadbeanomelette.html After making it, I'd chill it, and keep it in a small ice chest. When you get there, just cut and serve!

If fava beans can't be found, you can always just do the classic potato omelette (tortilla espanola). Other possibilities: Manchego cheese with quince paste. Gazpacho. Ajo bianco ("white gazpacho" of garlic and almonds). White anchovies marinated in garlic, parsley, olive oil. Figs or melon slices wrapped in prosciutto (or jamon serrano if you can find it). Raw or grilled vegetables (cold grilled shrimp or chicken would also be good) with romesco sauce (tomatoes, roasted peppers, nuts).

white anchovies with sliced pear and good Spanish cheese is also yummy.

I'd bring a nice selection of olives and nuts.

Take thinly sliced provolone and wrap it up cigar style inside prosciutto and serve it on a plate with a hunk of feta cheese. Bring a small container of honey with cracked pepper in it and pour it over the top of the cheese when you get there and serve it with crackers.

Manchego cheese and spanish almonds?

Trader Joe's - Caterer or Pusher?

Get a couple of packages of crack... I mean the Marcona almonds from Trader Joe's. They have plain or flavored with rosemary.
They are amazingly addictive.
Someone else already mentioned the date stuffed with an almond wrapped with jambon or prociutto, I think.

Shrimp ceviche? It can "cook" while you drive. :-)
